Leg of Lamb Recipe

Ingredients:
  • 6 lb - Leg Of Lamb (well-trimmed)
  • 5 - Garlic Cloves (peeled and thinly sliced)
  • 20 - Small Sprigs Of Fresh Rosemary
  • 20 - Small Sprigs Of Fresh Sage
  • ¼ cup - Olive Oil
  • Salt and Pepper to taste

Method:
  1. Make thin and deep slits all over the leg of lamb with the help of a small, sharp knife.
  2. Insert the garlic slivers and herb sprigs into the slits.
  3. Drizzle the leg of lamb with olive oil and sprinkle with salt and pepper.
  4. Let it marinate at room temperature for about 20 minutes.
  5. Preheat oven to 425o F.
  6. Place the leg of lamb on a rack set in a roasting pan.
  7. Let it cook for one hour.
  8. Remove from oven.
  9. Let it cool for ten minutes before carving.
